    Apple sauce is the traditional sauce for pork, especially roast pork. This is my homemade recipe that has just a touch of sage to complement the meat better, although you could leave out or go for a rosemary or thyme flavour instead.

    Ingredients
    Makes: 1 batch applesauce

    • 8 Granny Smith apples, peeled, cored and diced
    • 4 tablespoons water
    • 2 tablespoons sugar, or to taste
    • 1/2 teaspoon sage

    1. Put a small saucepan on a medium heat, add the water. When the water is boiling add all the apples, lower the heat and put on the lid.
    2. When the apples are very soft add the sugar and sage. Stir the apples briskly with a wooden spoon pushing any lumps against the side of the saucepan. Continue stirring and cooking until a smooth applesauce is reached.
    3. You can serve on the pork either hot or cold.
