Apple Strudel

    This is an old family standby, apple strudel, sometimes instead of using sultanas I will substitute for other available dried fruits or use none at all.

    Serves: 6 

    • 2 tablespoons caster sugar
    • 1 tablespoon plain flour
    • 1/4 teaspoon ground cinnamon
    • 2 large granny smith apples, peeled, cored and thinly sliced
    • 2 tablespoons sultanas, optional
    • 1 packet frozen filo pastry, thawed
    • 60g butter, melted
    • 1/2 cup fresh white breadcrumbs
    • icing sugar, to dust

    1. Preheat oven to 180 degrees C. Line a baking tray with non-stick baking paper.
    2. Combine the sugar, flour and cinnamon in a bowl. Add apples and sultanas then toss to coat.
    3. Place 1 sheet of filo on a workbench. Brush with melted butter and sprinkle with 2 tablespoons breadcrumbs. Top with another filo sheet. Repeat layers of filo, melted butter and breadcrumbs until you have 6 layers in total.
    4. With one short side facing you, spoon the apple mixture over the bottom half of the pastry, leaving a 2cm border around the edges. Roll the pastry into a large log. Place the log seam side down on the baking tray. Tuck the ends under the roll.
    5. Brush the top with excess butter. Bake for 35 minutes or until golden. Transfer to a wire rack lined with baking paper for 30 minutes to cool. Dust with icing sugar and serve.
