    This is a quick lunch for one I make when I have leftover cooked chicken. Very healthy and tasty.

    Ingredients
    Serves: 1 

    • 100ml chicken stock, boiling
    • 75g couscous
    • 1 tablespoon lemon juice
    • 1 clove garlic, finely diced
    • 1 teaspoon olive oil
    • 1 tomato, diced
    • 1 handful cucumber, diced
    • 1 handful fresh parsley, finely chopped
    • 1 handful spring onions, sliced
    • 1 portion leftover chicken

    Directions

    1. Make up the couscous using the chicken stock in a bowl. Cover with cling wrap and let the couscous absorb the stock, about 5 minutes.
    2. In another bowl, combine the lemon juice, garlic and oil. When the couscous is done, fluff it up with a fork and stir in the lemon juice mixture.
    3. Add the diced vegetables and parsley and stir well.
    4. Top with leftover chicken and serve!

    Tried this at home tonight and absolutely loved it. I cooked a chicken breast with some seasoning and cut it up so the salad was slightly warm and it was beautiful. - 25 Nov 2014
