Cajun Chicken with Tomato Basil Couscous

Cajun seasoning adds spice to this hearty chicken couscous meal. The leftovers keep well for lunch the next day.


Serves: 2 

  • cooking spray
  • 2 chicken breasts, diced
  • 2 teaspoons Cajun seasoning
  • 1 packet couscous
  • 1/2 red capsicum, diced
  • 100g beansprouts
  • 100g green beans, sliced
  • 2 tomatoes, diced
  • 1 1/2 teaspoons tomato paste
  • 1 tablespoon water
  • 1 teaspoon dried basil

  1. Spray a frypan with cooking spray and heat. Add chicken and 1 teaspoon Cajun seasoning and cook, stirring, until browned.
  2. Prepare the couscous according to packet instructions.
  3. To the chicken, add the capsicum, beansprouts, green beans and tomatoes. Cook, stirring, until the vegetables have softened.
  4. Add the couscous to the chicken along with the tomato paste, water, basil and remaining Cajun seasoning. Stir well and cook 5 more minutes. Serve!
