This is a very simple and tasty Thai chicken salad recipe that is perfect for bringing to work because it doesn't need reheating.


Serves: 2 

  • 1 tablespoon olive oil
  • 1/2 large onion, diced
  • 75g chicken breast meat, diced
  • salt and pepper, to taste
  • 1 1/2 cups cooked glass noodles
  • 8 cooked medium prawns
  • 4 cooked crab sticks, sliced
  • 1/2 cucumber, diced
  • handful peanuts, crushed
  • 1 spring onion, diced
  • 1 head lettuce, torn
  • Dressing
  • 5 tablespoons Thai sweet chilli sauce
  • 2 tablespoons fish sauce
  • 3 tablespoons lime juice

  1. Heat the oil in a frypan, add onion and saute 1 minute. Add chicken and cook until white. Add salt and pepper to taste then let cool.
  2. In a mixing bowl, toss together chicken and onion, noodles, prawns, crab sticks, cucumber, peanuts, spring onion and lettuce.
  3. In a small bowl or cup combine chilli sauce, fish sauce and lime juice. Mix well. Pour dressing over salad and serve. If not serving immediately, refrigerate salad and dressing separately.
