Thai chicken salad (larb gai) is a favourite Thai dish and great for barbecues or parties. A great combination of flavours.


Serves: 6 

  • 500g chicken mince
  • 4 red Thai chillies, finely diced
  • 1 stalk lemongrass, lightly smashed
  • 2 1/2 tablespoons fish sauce
  • 2 cloves garlic, finely diced
  • juice of 2 limes
  • 1 tablespoon oil
  • 1 red onion, finely diced
  • 50g peanuts, crushed
  • 15 mint leaves, roughly chopped
  • 2 1/2 tablespoons sweet chilli sauce
  • 10g coriander leaves, roughly chopped
  • To serve
  • 1 iceberg lettuce
  • 300g cooked jasmine rice

  1. Combine chicken, chillies, lemongrass stalk, fish sauce and garlic.
  2. Heat oil in a frying pan. Cook the mince mixture over medium high heat until chicken is done. Remove from heat and let cool.
  3. Once chicken is cooled, remove lemongrass stalk and then combine with all remaining ingredients in a bowl (except lettuce and rice).
  4. Serve the chicken salad with leaves of lettuce to use as wraps with a scoopful of rice.
