- diced dried apricots or grapes, to taste
- flaked almonds, to taste

- Cook the chicken breast in the microwave until done, let cool and dice.
- Mix the curry powder to taste with the mayonnaise, then add apricots and flaked almonds. Mix well.
- Stir in the diced chicken and let sit in the fridge at least 30 minutes so the flavours can develop before using in your sandwich.
