Thai Sweet and Sour Chicken

    A delicious sweet and sour chicken recipe with Thai flavours like basil and fish sauce instead of the more usual Chinese ones. It's different!

    Serves: 4 

    • Marinade
    • 1/2 tablespoon sugar
    • 1 teaspoon salt
    • 1/2 tablespoon light soy sauce
    • 1-2 tablespoons cornflour, mixed with 1 tablespoon water
    • 5-6 chicken breast fillets, sliced into thin strips
    • Sauce
    • 2-3 tablespoons water
    • 2 tablespoons tomato sauce
    • 2 tablespoons sugar
    • 1 tablespoon white vinegar
    • 4 teaspoons fish sauce
    • 1 tablespoon lemon juice
    • 2 teaspoons chilli sauce
    • 1 tablespoon oil
    • 1 tablespoon garlic, finely diced
    • 1 tablespoon oil
    • 2 medium onions, sliced
    • 2 green capsicums, thinly sliced
    • 6 slices tinned pineapple, quartered, plus two tablespoons syrup
    • 2 tablespoons water
    • 8-10 basil leaves

    1. Make the marinade by mixing together the sugar, salt, soy sauce and cornflour mixture. Mix in the chicken and let marinate 15 minutes.
    2. While the chicken is marinating, make the sauce. In a small bowl, mix together the water, tomato sauce, sugar, vinegar, fish sauce, lemon juice and chilli sauce. Set aside.
    3. Heat 1 tablespoon oil in a frying pan over high heat. Stir fry the garlic until aromatic, about 2-3 minutes. Stir in the chicken and cook until medium well done, 2-3 minutes. Set aside.
    4. Heat 1 tablespoon oil in the same frying pan over high heat. Stir fry the onions until soft, 3-4 minutes. Add the capsicum and pineapple and stir well.
    5. Add the chicken back to the frying pan. Stir in 2 tablespoons water, 2 tablespoons pineapple syrup and basil then cook 4-6 minutes.
    6. Mix in the sauce and stir until thickened, 2-3 minutes. Serve.
