I don't use rhubarb very often but when it does come way this is the recipe I reach for, goes great with double cream or vanilla ice cream.

Serves: 6 

  • Fruit
  • 6 Granny Smith apples
  • 3 sticks rhubarb
  • 20g butter
  • 75g brown sugar
  • 1 dash cinnamon
  • Topping
  • 100g butter
  • 200g plain flour
  • 1 dash cinnamon
  • 50g brown sugar

Preparation:10min  ›  Cook:45min  ›  Ready in:55min 

  1. Preheat the oven to 180 degrees C. Grease an ovenproof dish with butter.
  2. Fruit: Put the apples and rhubarb in the ovenproof dish and dot with butter. Mix the sugar and cinnamon together and sprinkle over the fruit.
  3. Topping: Put the butter, flour, cinnamon and half the sugar in a mixing bowl. Rub together until the mixture resembles coarse breadcrumbs. Heap the crumble over the fruit and sprinkle with the remaining sugar.
  4. To Cook: Bake for 45 minutes or until the top of the crumble is golden and crisp.
