Honey Mustard Turkey

    This is a wonderful turkey recipe that I like to make on or around Christmas, I am not interested in cooking a whole turkey. The honey and mustard are a great complement to the turkey and work well with chicken too.

    Serves: 6 

    • Mustard Rub
    • 1 tablespoon olive
    • 1 tablespoon whole grain mustard
    • salt and freshly ground black pepper, to taste
    • 6 bone-in, skin-on turkey thighs, or 8 chicken
    • Mustard Mixture
    • 3 tablespoons Dijon mustard
    • 3 tablespoon whole grain mustard
    • 3 tablespoons honey, to taste
    • 2 tablespoons chicken stock,to taste
    • 1 tablespoon olive oil
    • 3 sprigs rosemary

    1. Preheat oven to 200 degrees C.
    2. Mustard Rub Combine olive oil and whole grain mustard in a small bowl; season with salt and pepper, to taste. Using your fingers work the mustard rub onto both sides of the turkey.
    3. Mustard Mixture:In a large bowl whisk together Dijon mustard, whole grain mustard, honey and chicken stock. Add more chicken stock as needed until desired consistency is reached; set aside.
    4. Heat olive oil in a large oven proof skillet over medium high heat. Add turkey skin side down then sear both sides until golden brown; about 2 to 3 minutes per side. Add mustard mixture and sprinkle with rosemary.
    5. Place into oven and roast until completely cooked through; about 25-30 minutes.
    6. Serve with rice of choice.
