Impossible Pie With Bacon And Cheese

    Easy quiche like pie without pastry but with a base that makes itself. This has a lovely creamy, cheesy, bacon and onion flavour. Great served hot with salad, but just as yummy cold.

    Makes: 1 quiche

    • 6 eggs
    • 1 1/2 cups milk
    • 3/4 cup thickened cream
    • 3/4 cup self raising flour
    • salt and pepper, to taste
    • 6 rashers short cut bacon, diced
    • 1 small to medium onion, finely diced
    • 1 small tin or 1/2 cup capsicum, finely diced
    • 1 cup grated tasty cheese
    • extra grated tasty cheese
    • 1 tomato, sliced

    Preparation:10min  ›  Cook:45min  ›  Ready in:55min 

    1. Preheat the oven to 180 degrees C. Lightly grease a pie dish.
    2. In a large bowl, whisk eggs then add milk and cream, whisking until well combined.
    3. Whisk flour, salt and pepper into egg mixture. Add bacon, onion, capsicum and cheese to mix.
    4. Pour the mixture into the pie dish. Decorate top with sliced tomato then sprinkle with extra cheese.
    5. Cook for approximately 45 minutes. Test by putting a cut in top, if still runny, cook until set.


    NOTE: you can add any finely chopped veggies you like in this.

    This is really good - easy to make and tasty. I added asparagus spears and left out the capsicum. You could do all sorts of variations.  -  16 Mar 2017
