Apple Crumble Pie

    This recipe is a great alternative to making an apple pie a bit special by adding a crumble topping to it. You can use a pre-made base to make it a bit easier.

    • Pastry
    • 1/2 cups plain flour
    • 1/2 cup self raising flour
    • 1/2 teaspoon salt
    • 1 tablespoon white sugar
    • 125g unsalted butter
    • 1/8 cup sour cream
    • Filling
    • lemon juice for sprinkling over apples
    • 5 large Granny Smith apples, peeled, cored and sliced
    • 1/2 cup white sugar
    • 2 tablespoons plain flour
    • 1 teaspoon cinnamon
    • 1 teaspoon lemon juice
    • Crumble
    • 200g plain flour
    • salt, to taste
    • 100g caster sugar
    • 100g butter, cold

    1. Preheat oven to 180 degrees C. Grease a 23cm pie dish.
    2. Pastry: In a large bowl, combine flours, salt and sugar. Rub or cut in butter until coarse crumbs are formed.
    3. Mix in sour cream. Keep mixing until dough forms a ball, (dough may be slightly lumpy), this is fine. Wrap dough ball in plastic wrap and allow to chill for 1 hour.
    4. Once chilled, take dough out of refrigerator and roll the dough to 4mm thickness. Lift pastry into the prepared pie dish. Trim overhanging edges of pie base.
    5. Filling: Place apples into the pie base. In a small bowl, combine sugar, flour and cinnamon. Mix together thoroughly. Sprinkle mixture over apples. Sprinkle some lemon juice over apples. Place pie in refrigerator while the top is prepared.
    6. Crumble: In a bowl, mix the flour with the salt, sugar and butter until combined, then using your fingertips rub until it resembles crumbs.
    7. Bake in a preheated oven for 40 minutes, or until golden brown. Serve the pie warm or cold.
