Apple and Cinnamon Slice with Streusel Topping

    This is a recipe for a delightful slice that has a cake base yet is packed with apples and topped with streusel, so good we eat it as a dessert.

    Makes: 1 tray

    • Cake Mixture
    • 5 eggs
    • 1 egg white (egg yolk is used in streusel)
    • 175g sugar
    • 2 tablespoons vanilla sugar
    • 250g flour
    • 2 teaspoons baking powder
    • 90ml tasteless oil
    • 1 teaspoon cinnamon
    • 2 - 2 1/2 kg apples
    • 1/2 lemon, juiced
    • Streusel
    • 125g cold butter
    • 125g sugar
    • 1 teaspoon vanilla sugar
    • 1 egg yolk
    • 250g flour
    • 2 teaspoons baking soda
    • some melted butter for drizzling

    1. Cake Mixture: Whisk eggs and egg white until fluffy in a bowl. Stir in the sugar and vanilla sugar. Fold in the flour and baking powder with a scraper. Then add the oil and stir in with the scraper also, the mixture may appear very oily.
    2. Line a baking tray with baking paper and sprinkle with cinnamon then pour the mixture on the baking tray and spread evenly.
    3. Peel, core and cut the apples into quarters or eighths, depending on size. Drizzle with lemon juice.
    4. Lay the apple slices into the cake mixture with the curved side up.
    5. Preheat the oven to 180 degrees C.
    6. Streusel: Finely chop the cold butter then mix with the sugar, vanilla sugar and egg yolks with a dough hook (or combine by hand). Sift the flour and baking soda then combine until looks like crumbs.
    7. Sprinkle the crumbs over the apple mixture then bake in the preheated oven for about 45 minutes Immediately after removing from the oven sprinkle melted butter over the slice.

    I really enjoyed this. Maybe it was a litytle dry but I may have overcooked it a bit. It makes a huge quantity. You need a roasting size pan for it. I think next time I will use half of all the ingredients and make one that will fit into a regular cake tin. But overall we really enjoyed it with cream on top.  -  29 Apr 2017
