Hot Chocolate Sauce Pudding

    This pudding evokes childhood memories when food was a most important aspect of my family life. Perfect for chilly nights - a spongy pudding with a thick syrupy chocolate sauce.

    Serves: 6 

    • Pudding
    • 4 tablespoon butter
    • 125g sugar
    • 1 extra large egg
    • 125g self raising flour
    • 5 teaspoons cocoa
    • 120ml milk
    • Sauce
    • 60g brown sugar
    • 1 tablespoon cocoa
    • 375ml boiling water

    1. Pudding: Cream together butter and sugar in a bowl with an electric beater or a wooden spoon. Add the egg to the creamed mixture then beat together well.
    2. Sift together flour and cocoa powder. Add to creamed mixture together with milk. Pour into greased 2 litre baking dish.
    3. Sauce: Dissolve the brown sugar and cocoa in boiling water. Pour the sauce over the back of a metal spoon onto the pudding. Bake for 30 minutes at 180 degrees C.
    4. Remove from oven and serve hot (or cold) with your choice of custard or ice cream.
