Fried Rice with Leftover Chicken

    This is the best tasting fried rice. You can use anything you have in the fridge like vegetables, meat, leftovers, etc.

    Serves: 4 

    • 1 to 2 tablespoons vegetable oil
    • 1/2 onion, finely diced
    • 1 carrot, diced
    • 100g leftover chicken, diced
    • 500g cooked rice, leftovers
    • 3 eggs, whisked
    • 1 tomato, diced
    • 3 to 4 tablespoons soy sauce
    • 1 teaspoon sugar
    • salt and pepper, to taste

    1. Prepare all the ingredients because the cooking is very fast.
    2. Heat a frypan or wok, then pour in the oil and let it get hot. Stir fry the onions and carrots. Add the chicken to the frypan, stir, then add the rice. Stir until heated through.
    3. Push rice mixture to one side of the pan. Add the whisked eggs to the other side of the frypan.
    4. Let the eggs start to set then mix through the rice. Add 2-3 tablespoons of soy sauce and sugar.
    5. Add the tomatoes and stir everything together. Taste then season to taste with soy sauce, salt and pepper.
