    This is a lunchbox favourite that has endured over time. The apple slice recipe is easy to follow and simple to make, I hope you have as much success with it as I have.

    Serves: 8 

    • 1 cup plain flour
    • 1 cup self raising flour
    • 1/2 cup butter
    • 1/2 cup caster sugar
    • 1 egg, whisked
    • 2 cups stewed apple, or to taste

    1. Preheat the oven to 190 degrees C.
    2. Sift together the plain flour and SR flour then stir in the sugar. Rub the butter into these flour mixture. Add egg and mix into a firm dough.
    3. Move the dough to the bench and knead until it forms a smooth dough, then place in the fridge for 5 minutes.
    4. Divide the dough into two. Roll out one then fit into a greased lamington tray. Remove and repeat with the other half but leave this one in the tray.
    5. Spread the stewed apple over the top, it should be about 1cm thick.
    6. Top with the other half of the dough prepared earlier. Score the top sheet of pastry into desired slice serving sizes.
    7. Bake for 25 minutes. Allow to stand in tray until cold. When cold slice and serve.

    Easily my favourite slice recipe  -  19 Jan 2015


    Mmmmmm! Do yourself a favour and cook this..... Actually, make two because 1 won't last long enough to put into lunch boxes. This is easy to make and better to eat! Just like a bought one except no preservatives. A winner for me.  -  22 Feb 2015


    Awesome! My husband said it was better than those you buy in a bakery, so I was very pleased as I am not a great cook although I try very hard. Will be making on a regular basis. Yummy!!  -  30 Mar 2015
