Snickers Biscuit Bites

    Chocolate ripple biscuits filled with caramel and peanuts with peanut butter icing drizzled with chocolate ganache. Yummier than a snickers bar. My own recipe.

    Makes: 24 bites

    • 1 packet chocolate ripple biscuits
    • Filling
    • 1 packet columbine caramels
    • 1 tablespoon thickened cream
    • 1/2 tablespoon butter
    • 1 packet salted peanuts
    • Icing
    • 60g butter
    • 1/2 cup peanut butter
    • 1 1/2 tablespoons milk
    • 1 cup icing sugar
    • Ganache
    • 50g dark cooking chocolate
    • 30ml thickened cream
    • 12g butter

    1. Preheat the oven to 170 degrees C. You will need the 1/2 round patty pan tins for this.
    2. Lay biscuits across holes of tins and heat in oven until soft.
    3. Press the biscuits into holes to make tart shapes. Cool.
    4. Filling: Melt the caramels, cream and butter in a heatproof bowl over a saucepan of boiling water.
    5. Remove the saucepan from the heat but keep caramel bowl over the saucepan so the caramel doesn't set.
    6. Quickly spoon the caramel evenly into the biscuits (about 1 teaspoon each). Press about 6 salted peanuts across top of caramel. Refrigerate while making icing.
    7. Icing: With an electric mixer, beat butter and peanut butter together until well combined.
    8. Add 1/2 the icing sugar while beating well. Add the rest of icing sugar and milk while continuing to beating well.
    9. Pipe or spoon icing on top of filling.
    10. Ganache: Melt the cooking chocolate, cream and butter in a heatproof bowl over a saucepan of boiling water, stirring until smooth. Cool.
    11. Drizzle over top of icing.
