Basic Greek Salad

Perfect as a side to almost anything this is my go-to salad solution. It is quick, easy and a basic Greek salad correct to tradition.

Serves: 6 

  • 2 large ripe tomatoes
  • 1 large continental cucumber
  • 1 (150g) block feta cheese
  • 1 small red onion
  • handful pitted Kalamata olives
  • 1 sprig parsley, finely diced
  • 3 tablespoons olive oil
  • 1/2 lemon, juiced
  • salt and pepper, to taste

  1. Dice the tomato, cucumber and feta into equal sized pieces, about 1cm cubes. Finely slice the red onion.
  2. In shallow salad bowl combine tomatoes, cucumber, feta, onion and olives.
  3. Sprinkle with parsley, drizzle with olive oil and lemon juice. Season to taste with salt and pepper. Gently combine then serve.
