Crumpet French Toast

    These crumpets cooked like French toast are so much better than bread, the egg gets all the way into the holes and actually has a more eggy flavour because of it. Unusual, but highly recommended.

    Ingredients
    Makes: 6 crumpets

    • 4 eggs
    • 1/4 cup milk
    • 3 tablespoons soft brown sugar
    • 6 crumpets
    • 1 tablespoon ground cinnamon
    • butter, for frying

    Directions
    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. In a mixing bowl beat the eggs then add the milk and brown sugar stirring well to combine.
    2. Soak crumpets in the egg mixture until they have absorbed most of it.
    3. Heat a lightly buttered frying pan over medium high heat. Brown slices on both sides then sprinkle with cinnamon to serve.
