Red - Green Tomato Relish

    This is a tomato relish that I make using the plastic tops, not sure how long it can last as I only make small batches and it gets eaten fairly quickly.

    Makes: 4 jars

    • 15 green tomatoes
    • 5 large red onions
    • 1 tablespoon celery seeds
    • 1 tablespoon mustard seeds
    • 2 teaspoons salt
    • 2 cups sugar
    • 1 cup cider vinegar

    1. In a food processor coarsely chop the tomatoes and onions. Line a large colander with cheesecloth then place in a large bowl and pour in tomato mixture to drain for 1 hour.
    2. In a large non-aluminum stockpot combine tomato mixture with the celery seed, mustard seed, salt, sugar and vinegar.
    3. Bring to a boil and simmer over low heat 5 minutes while stirring frequently.
    4. Sterilize enough jars to hold relish. Pack relish into sterilized jars, making sure there are no spaces or air pockets. Fill jars all the way to top.
    5. Add the plastic preserving tops as per the manufactures instructions. Cool then place in a cool dark place until needed.
