This is a recipe that I found trying to replicate these amazing rectangle scones I ate while in Fiji, not quite the same but pretty close.
1 1/2 cups plain flour
2 tablespoons sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup thickened cream
extra cream, for brushing
coarse sugar, for sprinkling
- Preheat the oven to 205 degrees C. Line a baking tray with baking paper.
- In a medium bowl sift together the flour, sugar, baking powder and salt. Add the cream then stir just until the dough comes together.
- On a lightly floured surface knead the dough a few times then pat down until about 2cm thick.
- Cut into rectangles using a knife. Transfer onto the prepared baking tray then brush the tops with extra cream and sprinkle with coarse sugar. Bake for 15-20 minutes or until golden.
