This is a recipe that I found trying to replicate these amazing rectangle scones I ate while in Fiji, not quite the same but pretty close.

Serves: 6 

  • 1 1/2 cups plain flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup thickened cream
  • extra cream, for brushing
  • coarse sugar, for sprinkling

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Preheat the oven to 205 degrees C. Line a baking tray with baking paper.
  2. In a medium bowl sift together the flour, sugar, baking powder and salt. Add the cream then stir just until the dough comes together.
  3. On a lightly floured surface knead the dough a few times then pat down until about 2cm thick.
  4. Cut into rectangles using a knife. Transfer onto the prepared baking tray then brush the tops with extra cream and sprinkle with coarse sugar. Bake for 15-20 minutes or until golden.
