BBQ Corn and Capsicum Salad

    I look forward to summer every year to get the BBQ out and make this salad, it has even made it to the Christmas table.

    Serves: 8 

    • 4 cobs corn
    • 1 red capsicum
    • 1 green capsicum
    • 1 avocado
    • 4 stalks coriander
    • 2 limes, juiced

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat the BBQ to medium hot then cook the corn and capsicums until they are cooked through and have a little colour.
    2. Cut the corn from the cob and dice the capsicum then add to a large bowl.
    3. Dice the avocado and roughly dice the coriander. Add this to the corn and capsicum then drizzle with the lime juice.
    4. Gently stir then serve immediately while still warm.
