Green Bean and Feta Salad with Balsamic Dressing

    This is a tasty and colourful salad that can be made ahead of time. I sometimes use at Christmas as the red, green and white seem Christmassy.

    Serves: 6 

    • Dressing
    • 2 tablespoon balsamic vinegar
    • 2 tablespoon lemon juice
    • 2 tablespoon olive oil
    • 1 or 2 cloves garlic, finely diced, to taste
    • salt and pepper, to taste
    • Salad
    • 1/2 kg green beans
    • 1/2 small red onion
    • 1 cup cherry tomatoes
    • 1 small block feta, crumbled

    1. Dressing: In a small bowl whisk together the balsamic vinegar, lemon juice, olive oil, garlic, salt and pepper.
    2. Salad: Trim ends off green beans and rinse. Steam for about 3 to 4 minutes until crisp yet still tender. In a colander, rinse well with cold water to stop cooking then pat dry. Cut green beans into 5cm pieces.
    3. Dice red onion and halve cherry tomatoes.
    4. Place onion and green beans in a bowl. Drizzle dressing over top and toss to coat. Cover and refrigerate for at least an hour to marinate.
    5. To Serve: Add tomatoes and feta to the salad then lightly toss.
