This is the style of pancakes I used to eat as a child, it is based more on a batter (no rising agent) than the new style thick fluffy American ones.
3/4 cup plain flour
1 teaspoon salt
1 cup (250ml) milk
2 tablespoons (50ml) water
- Sift the flour and salt into a bowl then make a well in the middle.
- Combine the milk and water.
- Break the egg into the flour, add half the milk then mix until well combined. Slowly add the remaining milk until the desired thickness is reached.
- Heat a frypan to a medium heat, melt some butter, then cook the pancakes until brown on both sides.
