Double Raspberry and White Chocolate Streusel Slice

    A yummy raspberry jam slice, with added frozen raspberries to give it a nice tang, struesel top and white chocolate drizzle. One of my own recipes.

    Serves: 8 

    • Base
    • 2 cups plain flour
    • 1/2 cup caster sugar
    • 125g cold butter, cubed
    • 1 egg
    • 1 teaspoon milk
    • Filling
    • 1/2 cup raspberry jam
    • 300g frozen raspberries
    • Topping
    • 1 cup plain flour
    • 3/4 cup rolled oats
    • 1/4 cup caster sugar
    • 1/4 cup packed brown sugar
    • 1/2 teaspoon baking powder
    • 125g butter, melted
    • 120g white chocolate

    1. Preheat oven to 180 degrees C. Grease and line a Swiss roll tin with baking paper.
    2. Using a food processor, mix flour, sugar and butter until fine. Add egg and milk and mix until dough is formed.
    3. If you have no food processor, using two knives cut butter through sugar and flour until mix resembles breadcrumbs. Add egg and milk. Using hands, mix into a dough.
    4. Press mix into tray. Cook for 15 minutes or until just brown.
    5. Filling:

    6. Spread jam evenly over base and then sprinkle the raspberries evenly over the jam.
    7. Topping:

    8. Mix all ingredients together except the white chocolate and sprinkle over raspberries.
    9. Bake approximately 20 minutes or until just brown on top. Let cool.
    10. Melt white chocolate in a heatproof bowl over a pot of boiling water. Using a teaspoon, drizzle chocolate over top of slice.

    very nice I didnt have enough raspberries used strawberries as well, I would like try it with apricots dried or tinned with ordinary chocolate on top.  -  06 May 2017
