Annie's Spaghetti Bolognese

    An easy spaghetti bolognese recipe that will serve four and still have leftovers. Garnish with Parmesan and fresh basil if you like.

    Serves: 4 

    • 500g beef mince
    • 3 small onions, finely diced
    • 2 tins diced tomatoes
    • 2 beef stock cubes
    • 2 medium carrots, grated
    • 6 mushrooms, diced
    • 1 teaspoon oregano
    • 1 teaspoon basil
    • 4 rashers bacon, trimmed and diced
    • salt and pepper, to taste
    • 400g spaghetti

    1. In a large saucepan brown the beef mince about 3 minutes. Add onions and cook until onions are translucent. Add tomatoes and crumbled stock cubes and stir well.
    2. Add carrots, mushrooms, oregano and basil. Let cook a few more minutes.
    3. Add bacon, partially cover and let simmer 40 minutes. Season with salt and pepper.
    4. After 40 minutes, heat up a saucepan of salted water to a boil. Cook spaghetti until al dente. Serve with the sauce.
