Spaghetti and Stuffed Mozzarella Meatballs

    This recipe is a little time consuming but everyone will love it. Meatballs with a cheesy inside can't be beaten!

    Serves: 4 

    • 500g pork mince
    • salt and pepper, to taste
    • dash Worcestershire sauce
    • 2-3 sage leaves, minced
    • 1 (250g) block mozzarella, cut into cubes
    • 2 eggs, beaten
    • flour, for coating
    • olive oil, for frying
    • 1-2 white onions, finely diced
    • 2 cloves garlic, finely diced
    • 1 (400g) tin diced tomatoes
    • 1 tablespoon tomato paste
    • 1 teaspoon mustard
    • 1 bunch basil
    • 1 packet spaghetti
    • 1 handful grated Cheddar, to serve

    1. Season the pork mince with salt and pepper. Add a dash of Worcestershire and sage leaves then mix with your hands.
    2. Take a cube of mozzarella, dip in beaten egg then coat with flour. Wrap the pork mince around the cheese and form into a ball. Lightly coat each meatball with flour.
    3. Brown the meatballs in a little olive oil and set aside.
    4. Heat more olive oil in a saucepan or casserole dish. Saute onion and garlic until softened. Add diced tomatoes and tomato paste. Stir in mustard.
    5. Add fresh basil then distribute meatballs on top of the sauce like dumplings. Cover and simmer on low heat.
    6. Cook spaghetti in boiling salted water. Serve with sauce and grated Cheddar.
