Lighter Spaghetti and Meatballs

A lighter version of spaghetti and meatballs for one person. You can also drain the fat from the meatballs after they have browned.


Serves: 1 

  • 125g lean beef mince
  • 1 teaspoon mustard
  • 1 egg white
  • 1/4 teaspoon mixed herbs
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • salt and pepper, to taste
  • 1/4 onion, finely diced
  • 1/2 clove garlic, finely diced
  • 200g tomatoes, diced
  • 50g spaghetti

  1. In a bowl, combine the beef mince, mustard, egg white, herbs, salt and pepper and knead well. Shape mixture into meatballs.
  2. Cook the meatballs in a saucepan on low heat so their own fat will grease the saucepan. Add the onion, garlic, more salt and pepper and stir until meatballs are browned. Add tomatoes and simmer 12-15 minutes.
  3. Meanwhile, cook spaghetti according to packet directions. Drain and serve with meatball sauce.
