Chicken, Leek and Broccoli Creamy Pasta Bake

    This is a delicious and easy midweek meal. Chicken is baked with broccoli, leek and pasta in a cream of chicken sauce.

    Serves: 4 

    • 220g spiral pasta
    • 150g broccoli, cut into florets
    • olive oil, as needed
    • 1 leek, thinly sliced
    • 2 chicken breast fillets, cut into strips
    • 1 clove garlic, crushed
    • pinch dried mixed herbs
    • black pepper, to taste
    • 1 tin cream of chicken soup
    • handful grated cheese
    • 2 tablespoons breadcrumbs (optional)

    1. Preheat oven to 180 degrees C.
    2. Cook the pasta in boiling salted water until al dente. Drain and set aside.
    3. Place the broccoli in a bowl, just cover with water and microwave 3 minutes. Drain and set aside.
    4. Meanwhile, heat olive oil in a frypan and cook the leek until softened. Add the chicken and fry until no longer pink. Add garlic and cook 1 more minute. Add mixed herbs and pepper and stir well.
    5. Add the broccoli and cream of chicken soup. Bring to a simmer and cook gently 5-10 minutes. Add the cheese and pasta, stir and transfer to a baking dish. Sprinkle over the breadcrumbs, if using.
    6. Cover with foil and bake 30 minutes. Remove foil and cook 10 more minutes. Serve.

    Make Ahead

    If you want to make ahead, at the end of stage 4, allow to cool, cover with foil and place in the fridge until required. Remove from the fridge about 1/2 hour before baking.

    A lovely meal and easy to make. I halved most of ingredients because made it for 2 and a toddler. Used whole tin of soup though so would recommend getting a second tin if making it for 4 because there was only just enough sauce for 2.  -  03 Feb 2013  (Review from Allrecipes UK & Ireland)


    Beautiful empty plates all round, which is rare in,our house with 4 fussy kids I tweaked it slightly, I added som Parmesan , instead of breadcrumbs I added crisps which was yum TIP....I always coat chicken in plain flour, it makes the chicken soft and juicy  -  26 Aug 2013  (Review from Allrecipes UK & Ireland)


    This was very nice and so easy to make and although I made several ingredient changes (mainly to use up some fresh ingredients I had) it clearly proves itself as a fantastic base that can easily be adjusted to suit your own tastes, although there is absolutely nothing wrong with the original! I did not use broccoli, but instead added a yellow pepper, mushrooms, twice the amount of garlic (as we love it) and topped with about a dozen whole cherry tomatoes and panko breadcrumbs. Following the advice of other reviewers I also used two cans of soup and this worked perfectly, one tin would have probably been too little.
