Chicken in Foil

    When you are looking for a low calorie, low mess meal that takes about 5 minutes to prepare, look no further. Not only good for you but yummy too. This recipe is for one, but just repeat the process for each additional fillet needed.

    Serves: 1 

    • 1 chicken breast fillet
    • 1/2 cup sweet chilli sauce
    • large handful sliced mushrooms
    • 1/2 onion, sliced
    • 4 slices tomato
    • 1/2 teaspoon minced garlic
    • salt and pepper, to taste

    Preparation:5min  ›  Cook:45min  ›  Ready in:50min 

    1. Preheat oven to 180 degrees C.
    2. Place chicken breast on a piece of foil large enough to wrap around it.
    3. Cover chicken with the chilli sauce then the mushrooms, onion, tomato, garlic and salt and pepper.
    4. Wrap foil around the chicken, adding another piece of foil if necessary.
    5. Place on a tray seam side up.
    6. Cook for approx 3/4 hour, depending on size of breast. Check at about 1/2 hour.
    7. Serve with salad or steamed vegies.
