Put all ingredients in a blender.
Blend until mixture is sticky enough to roll balls with.
Roll into 40g balls and coat with coconut. Refrigerate.
You can substitute the nuts I've used for any kind you like. If you don't like dried apricots try a different dried fruit. Any protein powder can be used, I chose hemp powder but you can use any. Play around with different ingredients, these are super easy, healthier than your usual snacks and absolutely delicious.
