Macaroni Cheese with Two Cheeses and Bacon

    This is my idea of a good mac and cheese. Even though it's called macaroni and cheese, you can basically use any type of pasta. I used casarecce by Barilla.

    Serves: 6 

    • 500g pasta
    • 6 cups milk
    • 6 heaped dessertspoons cornflour
    • extra milk, as needed
    • 500g block Kraft(TM) cheddar cheese, grated (the one in the blue box, not from deli section)
    • 2 cups tasty cheese, grated
    • salt, to taste
    • Topping
    • 6 rashers short cut bacon, diced
    • 1 1/2 cups grated tasty cheese

    1. Preheat oven to 180 degrees C.
    2. Boil pasta in a large pot of salted water until al dente. Drain.
    3. In a medium saucepan on medium temperature heat the 6 cups of milk.
    4. Mix the cornflour with enough of the extra milk until you have a smooth pourable paste. Stir cornflour mix into heating milk.
    5. Bring to the boil, stirring. If too thick for your liking, stir through a bit more milk.
    6. Lower temperature and add cheeses, stirring until melted. Add salt to taste.
    7. Tip pasta into a medium sized baking dish and stir cheese sauce through. Sprinkle with tasty cheese and diced bacon.
    8. Cook until nicely brown on top, about 20 minutes.
