Black Bean Avocado Salsa

    Black beans, avocado, corn, and roma tomatoes make the base of this salsa with a healthy dose of lime juice.

    • 1 (425g) can black beans, rinsed and drained
    • 1 (310g) can whole kernel sweet corn, drained
    • 4 roma (plum) tomatoes, seeded and chopped
    • 1 small red capsicum, diced
    • 1 jalapeno chilli, seeded and minced
    • 1/3 cup chopped fresh coriander
    • 1/4 cup diced red onion
    • 1/4 cup fresh lime juice
    • 2 tablespoons red wine vinegar
    • 1 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 2 avocados, diced

    1. Mix black beans, corn, tomatoes, capsicum, jalapeno chilli, coriander, red onion, lime juice, vinegar, salt and black pepper in a bowl; fold avocado into the mixture. Cover bowl with plastic wrap, putting it right on top of salsa; chill at least 2 hours.
