Fusilli with Zucchini and Pesto

    A quick pasta I like to make with the zucchini from the garden and store bought pesto of any type.

    Serves: 4 

    • 300g fusilli or penne pasta
    • 6 tablespoons olive oil
    • 2 garlic cloves, sliced
    • 1 teaspoon lemon zest
    • 1/2 teaspoon chilli flakes
    • 400g zucchini, thinly sliced
    • 1 tablespoon fresh basil, sliced
    • 3 tablespoons pesto
    • salt and pepper, to taste

    1. Cook the fusilli according to packet instructions.
    2. Meanwhile, heat 2 tablespoons oil in a frypan and add the garlic, lemon zest, chilli flakes and zucchini. Fry 3 minutes until zucchini is browning.
    3. Drain the pasta and add to the frypan with the remaining olive oil, basil, pesto and salt and pepper. Warm through and serve.
