Fusilli with Broccolli and Blue Cheese

    This simple vegetarian pasta recipe is good with other small pasta shapes like shells but I like spiral fusilli.

    Serves: 4 

    • 220g fusilli pasta
    • 4 cups broccoli florets
    • 1 cup blue cheese, crumbled
    • 60g butter
    • 1/2 cup thickened cream
    • salt and pepper, to taste

    1. Cook the fusilli according to packet directions, about 12 minutes. 3 minutes before end of cooking time, toss in the broccoli. Drain.
    2. Put the saucepan back on the stove and add the cheese, utter and cream. Simmer, stirring, until you have a smooth sauce. Add salt and pepper as desired.
    3. Return the fusilli and broccoli to the pot and stir well. Serve.
