Three Cheese Tagliatelle

    Pasta and cheese is perfect by itself but I like to add some diced bacon as well just for that salty kick of specialness.

    Serves: 4 

    • 450g tagliatelle
    • 60g butter
    • 1 onion, finely diced
    • 3 cloves garlic, crushed
    • 120g bacon, diced
    • 1 cup Cheddar, grated
    • 1 cup Parmesan, grated
    • 1 cup Gruyere, grated
    • 1 cup thickened cream
    • 4 tablespoons parsley, chopped

    1. Cook the tagliatelle in boiling salted water until al dente.
    2. Meanwhile, melt half the butter in a frypan and add the garlic and onion. Cook 3 minutes until onion is softening. Add the bacon and cook 5 more minutes.
    3. Drain the tagliatelle and place in a bowl. Add remaining butter and toss. Add the onion-bacon mixture, cheeses and cream. Mix well until cheese has mostly melted. Serve garnished with parsley.
