Spaghetti Marinara

    This marinara sauce recipe contains no tomatoes. You can use fresh mussels if you prefer if you can be bothered steaming and shelling them!

    Serves: 4 

    • 300g spaghetti
    • 2 tablespoons olive oil
    • 1 onion, diced
    • 1 cup white wine
    • 1 clove garlic, crushed
    • 1/2 cup thickened cream
    • 150g cooked peeled small prawns
    • 150g tinned smoked mussels
    • salt and pepper, to taste

    1. Cook the pasta in boiling salted water until al dente.
    2. Meanwhile heat the olive oil in a frypan and cook the onion until softened, about five minutes. Add wine and garlic and reduce the liquid a bit. Add cream, prawns and mussels. Season with salt and pepper.
    3. Drain the pasta and put in bowls and top with the seafood. You can also serve this with grated cheese if you like, or chopped chives.
