Tagliatelle Alfredo

    A good creamy alfredo pasta sauce is perfect comfort food to my mind. Garnish it with parsley or fresh coriander.

    Serves: 4 

    • 300g tagliatelle
    • 2 tablespoons butter
    • 1 onion, diced
    • 3 cloves garlic, diced
    • 2 cups light cream
    • 1/2 teaspoon nutmeg
    • 1 egg, beaten
    • 1 cup Parmesan, grated
    • salt and pepper, to taste

    1. Cook the tagliatelle in salted boiling water until al dente.
    2. While the tagliatelle is cooking, melt the butter in a saucepan. Add the onion and garlic and cook a couple of minutes, until the onion is softening.
    3. Add the cream and nutmeg and bring to a simmer, then add salt and pepper to taste and drop to low heat.
    4. Add the drained pasta, egg and cheese and stir well until the egg cooks. Serve immediately, garnished with parsley if you like.
