Creamy Tagliatelle with Asparagus

    This recipe is for a quick creamy pasta sauce which has a little grated ginger in it for a taste sensation.

    Serves: 4 

    • 2 tablespoons butter
    • 2 cups asparagus, cut into 3cm lengths
    • 1 cup white mushrooms, sliced
    • 3cm fresh ginger, grated
    • 1 tablespoon fresh tarragon, chopped
    • 1 cup thickened cream
    • 350g tagliatelle
    • salt and pepper, to taste

    1. Melt the butter in a large frying pan and add the asparagus, mushrooms and grated ginger. Cook slowly for 5 minutes.
    2. Add the tarragon and cream to the frying pan then season with salt and pepper. Simmer 5 more minutes.
    3. Meanwhile, cook the tagliatelle in plenty of salted water. Drain and return to the saucepan. Add the asparagus mixture and fold through. Serve.
