Mint and Walnut Pesto

    This delicious and unusual pesto only takes a few minutes to make and then is ready for any time you need a quick pasta.

    Serves: 4 

    • 3 cloves garlic
    • 1/2 cup walnuts
    • 1/2 cup fresh mint leaves
    • 1 cup Parmesan cheese, grated
    • 2/3 cup olive oil
    • salt, to taste

    1. Place all ingredients in a food processor or blender and process until smooth. Alternatively you can make it in a mortar and pestle - pound the garlic and walnuts first, then add each ingredient and pound before moving on.
    2. Taste and season with salt. This sauce will keep up to two weeks, covered, in the refrigerator.
