Easy Lentil Soup

    I love lentil soup but I can never be bothered soaking the lentils. This easy recipe uses tinned lentils from the supermarket.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 small onion, diced
    • 1 carrot, diced
    • 2 cups vegetable stock
    • salt and pepper, to taste
    • 2 (400g) tins lentils
    • splash red wine vinegar
    • mint, to garnish

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Heat oil in a deep saucepan. Add onion and carrot and cook 5 minutes until vegetables are browning.
    2. Add stock, salt and pepper and lentils. Simmer 10 minutes or until carrot is soft.
    3. Ladle soup into bowls and add a dash of red wine vinegar to each. Sprinkle with mint.
