Chicken and Tomato Pasta

    One of the simplest pasta recipes I know that uses leftover chicken and bacon for a burst of great flavour.

    Serves: 4 

    • 1 1/2 cups small pasta shapes
    • 2 rashers bacon
    • 1 cup onion, diced
    • 2 (400g) tins diced tomatoes
    • 2 cup cooked chicken, shredded
    • 1/4 cup fresh basil, torn
    • salt and pepper, to taste
    • grated Parmesan, to taste

    1. Cook the pasta according to packet directions and drain.
    2. Meanwhile, fry the bacon in a nonstick frypan until crisp. Remove from pan and crumble. Add the onions to the bacon fat in the frypan and cook 3 minutes or until soft.
    3. Add the tomatoes to the frypan. Cook 2 minutes or until thickened, stirring. Add bacon, chicken, basil, salt and pepper. Cook 2 more minutes until heated through.
    4. Stir in the pasta and divide between 4 bowls. Top with Parmesan.
