BBQ Apricot Chicken Kebabs

    Chicken and fruit can go together very well as this recipe shows. Chicken is barbecued on skewers with an apricot glaze.

    Serves: 4 

    • 1/2 cup apricot preserves
    • 1 teaspoon cumin
    • 1 teaspoon cinnamon
    • 1/2 teaspoon ground coriander
    • 1/2 teaspoon salt
    • 4 skinless, boneless chicken breast halves, cut into large cubes

    1. Preheat barbecue and soak wooden skewers (or use metal ones)
    2. Combine apricot preserves, cumin, cinnamon, coriander and salt in a bowl. Add chicken pieces and toss to coat. Thread chicken onto 4 large skewers (or more small ones).
    3. Mist the chicken with cooking spray, then barbecue 5 minutes a side or until done.
