Tim Tam Chocolate Cheesecake With Strawberry Cream

    Makes: 1 cheesecake

    • 400g chocolate tim tams
    • 200g white chocolate and raspberry tim tams
    • 50g butter, melted
    • 500g cream cheese
    • 1/4 cup sugar
    • 560g dark cooking chocolate
    • 300ml thickened cream, whipped
    • Toppping
    • 600ml thickened cream
    • 2 tablespoons sugar
    • 6 teaspoons strawberry essence
    • 6 drops pink food colouring

    Preparation:30min  ›  Extra time:2hours chilling  ›  Ready in:2hours30min 

    1. Line base of 22cm springform tin with baking paper.
    2. Line side of pan with tim tams, alternating colours.
    3. Finely crush the leftover chocolate tim tams and mix with the butter until combined. Press over base of pan and refrigerate while making filling.
    4. Melt chocolate in a heatproof bowl over a pot of boiling water. Let cool.
    5. With an electric mixer, beat cream cheese and sugar until light and fluffy.
    6. Beat in chocolate. It may look curdled but keep beating until smooth. Fold in cream.
    7. Spoon into tin and level top. Refrigerate until set.
    8. With an electric mixer, beat the cream, sugar, essence and colouring till thick.
    9. Decorate cheesecake with strawberry cream, strawberries and chocolate.
