The easiest rice pudding you will ever make, this recipe uses cream cheese for extra richness.

Serves: 4 

  • 2/3 cup milk
  • 120g cream cheese
  • 2 cups leftover cooked rice
  • 1/2 cup raisins or sultanas
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla

  1. Combine the milk and cream cheese in a saucepan and mix until smooth over medium heat.
  2. Add all remaining ingredients and stir well. Simmer until it thickens, about 10 minutes. Serve warm!
