Stir Fried Silverbeet with Pine Nuts

    Silverbeet is a great vegetable that lends itself perfectly to Asian flavours like garlic, ginger and soy sauce.

    Serves: 4 

    • 1/4 cup pine nuts
    • 2 teaspoons oil
    • 2 cloves garlic, finely diced
    • 2cm fresh ginger, finely diced
    • 1 bunch silverbeet, stems removed, diced
    • 2 tablespoons soy sauce

    1. Toast the pine nuts in a dry frypan for 2-3 minutes, until golden. Don't let them burn. Set aside.
    2. Add the oil to the frypan and stir fry the garlic and ginger 1 minute. Add the silverbeet and soy sauce, stir and cover. Steam the silverbeet until wilted, about 2 more minutes. Serve topped with the toasted pine nuts.
