Broccoli Mashed Potatoes

    Not a bad way to get some veggies in your kids, these 'green' mashed potatoes are just delicious!

    Serves: 4 

    • 1 large potato, peeled and cubed
    • 1 clove garlic, peeled
    • 1 head broccoli, cut into florets
    • 1/4 cup milk, or more as needed
    • 1/4 cup grated Parmesan
    • salt and pepper, to taste

    1. Place the potato and garlic clove in a saucepan and cover with cold water. Bring to a boil and boil 5 minutes. Add the broccoli and boil another few minutes until potato is tender. Drain and return vegetables to the saucepan.
    2. Add the milk and mash well with a potato masher. Add the Parmesan and keep mashing until the consistency is how you like it. Taste and season with salt and pepper.
