Roasted Balsamic Asparagus

    This little secret is too good not to share. I always oven roast asparagus rather than boiling it, I just discovered a little vinegar makes this recipe even better.

    Serves: 4 

    • olive oil, as needed
    • 1 bunch asparagus
    • 2 tablespoons good balsamic vinegar
    • salt and pepper, to taste

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Preheat oven to 220 degrees C. Lightly oil a baking tray.
    2. Trim or snap off the woody bottoms of the asparagus, place on the baking tray and drizzle with a little more olive oil. Rub with your fingers to coat. Brush with the balsamic vinegar and season with salt and pepper.
    3. Roast about 10 minutes, until tender but not soft!
