BBQ Pork Satay

    Satay skewers are a Thai street food that are simply irresistable! They are very easy to make at home. Serve with peanut sauce for the perfect BBQ treat.

    Serves: 4 

    • 1 kg boneless pork chops
    • Marinade
    • 1/4 cup honey
    • 1/2 cup coconut milk
    • 1/4 cup fish sauce
    • 2 teaspoons soy sauce
    • 1 tablespoon fresh lime juice
    • 1/2 teaspoon cumin
    • 1/2 teaspoon turmeric
    • 1 teaspoon coriander
    • 1 teapsoon cayenne pepper
    • 3 cloves garlic, minced

    1. Slice the pork chops into long strips, about 1cm thick and 2cm wide. Soak thick kebab sticks in water to prevent them from burning.
    2. In a bowl, combine the marinade ingredients and mix well until smooth. Taste the marinade, and if it doesn't seem salty enough, add a little more soy sauce or fish sauce.
    3. Marinate the pork in the mixture, covered in the fridge, about 4 hours.
    4. When ready to cook, preheat the barbecue and thread two or three pieces of pork onto each skewer, keeping the slices flat for even cooking. You should have about 12 skewers.
    5. Barbecue about 5 minutes a side or until just cooked through with decent grill marks.
