Baked Apples with Dates and Walnuts

    Baked apples are a very easy fruit dessert for colder evenings. This recipe is easily doubled. Serve with ice cream.

    Serves: 4 

    • 4 medium apples
    • juice of 1/2 lemon
    • 100g butter, room temperature, divided
    • 50g walnuts, diced
    • 50g dates, finely diced
    • 1 tablespoon sugar
    • 1 teaspoon cinnamon

    1. Preheat the oven to 180 degrees C and grease a baking tin.
    2. Core the apples and drizzle the interiors with lemon juice.
    3. In a bowl, combine half the butter with the walnuts, dates, sugar and cinnamon. Taste and add more sugar if desired. Use to fill the apples and place in the baking tin.
    4. Melt the remaining butter and drizzle over the apples. Bake 40 minutes and serve warm.
